Ingredients:

  • 2 whole trout, cleaned and gutted
  • 1 cedar plank, soaked in water for at least 1 hour
  • Salt and pepper, to taste
  • Fresh lemon wedges, for serving
  • Chopped fresh herbs (such as parsley or dill), for garnish (optional)

Instructions:

  1. Preheat your grill to medium-high heat (around 350-400°F/175-200°C).
  2. Season the trout generously with salt and pepper, both inside and out.
  3. Place the soaked cedar plank on the grill and close the lid. Let the plank heat up for a few minutes until it starts to smoke and crackle slightly.
  4. Carefully place the seasoned trout onto the hot cedar plank, skin side down. Close the grill lid and let the trout cook undisturbed for about 15-20 minutes, depending on the size of the fish, or until the flesh is opaque and flakes easily with a fork.
  5. Keep an eye on the grill temperature and adjust as needed to maintain a steady heat. Avoid opening the grill lid too often to retain the smoky flavor.
  6. Once the trout is cooked through, carefully remove the cedar plank from the grill using heatproof gloves or tongs. Transfer the trout to a serving platter.
  7. Garnish the grilled trout with fresh lemon wedges and chopped herbs, if desired.
